I likes my cornbread....and I've had it cooked in almost every device. I DO NOT like it cooked in those cast iron skillets shaped like small ears of corn. The cornbread comes out much too dry and brittle. I picked up a cast iron skillet from BP that has 8 pie shaped divisions and it comes out moist and perfect every time without having to slice off a piece. If you cook much of it you owe it to yourself to get one.
 
Around my place the cornbread doesn't stick around long enough to determine if it got cooked in the shape of an ear of corn or dinosaur. My kids actually argue over who is cooking the cornbread.

Its really kind of strange to hear teen-agers talking about whether or not you can taste the garlic/brown sugar/ginger/curry/cheese in their cornbread.

What brand cornbread mix you guys use?

Sounds like your kids are making some kinda of fancy big city cornbread..lol
 
Nah, its kids who like the taste of cornbread. I missed an ingredient recently and my daughter said too dry, ech Daddy this isn't very good.

My son takes mozzarella cheese and sprinkles it over the top and cooks it in the toaster oven. Never says a word about what it tastes like.

I either make mine in a number 8 BSR cast iron skillet or an unmarked Wagner cast iron gem pan.

White self rising corn meal, little bit of flour, buttermilk and eggs.
 
MUP, my Dad would eat Crackers and Milk as desert. When he started putting cornbread in his milk at the dinner table I thought Mom was gonna have a cow. I tried it, I'll pass.
 
Go to the Tea Shop in Downtown Memphis and try theirs. Simply wonderful. They take their corn sticks and make a disc called the Lacy Special. The split open the corn sticks, and ladle rice, Garvey and baked chicken on top and top it with more split corn sticks.

The only problem with the Little Tea Shop is that they don't serve real butter…..delicious food otherwise.

A little off subject, but I 've just learned how to clean up rusty or cruddy cast iron using electrolysis. pretty dang interesting and easy. ;)

Yea...been doing that for awhile. Electrolysis with a battery charger and washing soda...
 
Al...

1/2 cup self-rising flour
1 1/2 cups self rising corn meal
1 egg lightly beaten
2 heaping Tbsp. mayonnaise
1 Tbsp. sugar
1 1/4 cups of buttermilk
1 Tbsp. bacon grease

Heat skillet about 15 minutes in oven at 400 degrees with bacon grease. Pour excess (not over 1 Tbsp. into cornbread mixture. Cook 30 minutes or until golden.
