First off, I like the taste of trout so I tend to go really light on the spices. You can filet trout just like anything else nut never caught one big enough to filet. I used to cook with head, fins, and skin on, some pepper, Butter poured over it, wrapped in foil, baked in oven. Pull the skin off, eat to backbone, flip over & repeat.
you can also fry them whole after skinning them. take your time eating them to the bone then removing it and eating the other side.
When I fry them, just salt pepper and lemon is used to season them. You can use flour, corn meal, or a mixture of both to bread them.
If you want to or need room in the pan, the heads and tails can be removed. I usually just gut them and skin them for fried, for baked or grilled, the skin stays on.

I wonder if i froze the fish a little if that would make easy to fillet. Trout flesh seems to be a little softer than bass. Im like you i just pepper and butter mine.

They are easy to fillet, just small and have lots of thin bones that are hard to see, and therefore, hard to remove. Cutting around them would take much of the meat away. After cooking, the bones and meat come apart very easily. Unless I have a 20+ incher the fillets are not worth it in my opinion, so I leave them whole.
I like to eat fish and know it won't be like at captain d's (it will be better) My wife and daughter on the other hand usually won't eat whole fish, and want perfectly shaped and breaded fillets

Smoke them with skin on, remove skin and carefully pull meat off the bones. Mix the meat with some cream cheese and dill and serve with ruffles. It won't last long! Of course we have trouble keeping the kids out of them when they are fresh off the smoker.
Whether you grill, fry, or smoke you can remove every bone from a trout by finding the fan shaped bone at the end of the tail, grab it and the spine and both sets of rib bones will pull right out of the fish in one piece, as long as it is not ober cooked. I cut my fishing teeth on the caney fork. The small "stocker"rainbows are good to simply gut, remove the eyes, pack gut with butter, and your favorite cajun seasonings wrap in foil and grill. Bones will pull right out if you try...
Grill them with some wet hickory chips added to the fire, peel the backbone out and chow down! I really like the tinge of hickory taste the chips add. The tail is pretty tasty too once is tinged just a little black.
Wrap in bacon and put on grill, when bacon is done take off grill and unwrap the bacon. then grab the spine of trout and pull it off the back and all the bones come with it. works for me everytime
