Yes you want the inside temp of the meat at about 125 degrees. Let the meat rest for 15 min. Then sear about 1 min a side till internal reach 135 degrees. What you will have is a real med rare inside..completely inside with a nice sear or crusty outside layer. Very Good that way. I do the same thing except cook in a oven first at 275 degrees till internal temps reach 125.
I am using a "fry daddy" type cooker, it did not have a 135 degree setting so by trial and error I finally got the correct setting and put a scratch mark on the dial
