Cooked some chicken with Mayo

Baked me up some chicken strips wrapped in mayo and then rolled in some cornmeal/flour with a touch of powdered garlic, pepper, and parsley. My Wife and one of my boys were poking fun at me, said I had the sequence wrong for making a sandwich.

Haha, ain't NOBODY laughing now. 3 pounds of strips gone so fast I couldn't even get a pic. Thanks to whomever it was said to coat corn in mayo and roast it.

Next edition will see some spicier stuff. Bet I can chop some jalapenos up small enough so's you wouldn't notice. Thinking I'm gonna toast up a load of bread to get some crumbs instead of cornmeal.

Any suggestions chime in please.
 
Sounds good. Another good one is to mix some mayo and mustard together and spread it onto skinless, boneless chicken chests. Sprinkle some bread crumbs and parmesan cheese on top and put it in the oven. Just when they're getting done turn the broiler on for a few minutes to brown the bread crumbs and give it a nice crunch. Simple to make and pretty darn tasty.
