A buddy of mine just did some honeysuckle ice cream. Soak the blossoms in the cream overnight, strain, and continue on with the ice cream.

Dude has gotten pretty creative with his.

They had some at the Science of Beer event (put on by Yazoo at Adventure Science Center) and it was actually surprisingly good, I wouldn't have thought the two mixed well but it was quite enjoyable.
