(2) 12oz bags of chocolate chips....I picked a bag each of Ghirardelli semi-sweet and 60% dark. Toss it in a double-boiler setup with a pat of butter, let it melt, and stir it smooth.
I like to cook bacon in the oven on baking racks over cookie sheets. After this batch, I think I'm going to stick with thick-cut bacon. This stuff was a little too thin. Slice in half for easier coating and easier serving.
After that, it's whatever you want to do with it. I got a small bag of sliced almonds, toasted them, then crushed them into a crumble. Dip the bacon, piece at a time into the chocolate. Coat well, let it drip for a minute, and spread it out on parchment paper. I'd sprinkle just the teeeennnniest little bit of kosher salt on one side of each piece, then coat it in the toasted almonds. Stick it in the fridge for a while, and enjoy.

Oh, and I thought it'd be a shame to just rinse the bowl down the drain. When you're all done, whisk in some milk into the bowl to turn the remaining chocolate into hot cocoa. The slight hint of bacon flavor will make your leg twitch.
