I made my first Ceviche last week and it was the best I have ever had. Freeking shrimp were more expensive($9.99/pound) in Orange Beach than in Tennessee. I could have gotten them cheaper, but I didn't feel like driving and I only needed 1.5 pounds. Used some fresh snapper that we caught earlier in the day. Didn't really follow any specific recipe, I just read through several and kinda winged it.

Most of it was eaten as tacos...but it was also great on tortilla chips.

I had my first exposure to it in Florida several years ago. My uncle and one of his buddies made some from amberjack. I forget what all was in it, but I remember they squeezed a LOT of limes and lemons into a pan with the amberjack in it. Conversation went like this:
Me: Whatcha making?
Uncle: Ceviche
Me: Never heard of it...when are you cooking it?
Uncle: I'm not.
Me: What? When are we eating it?
Uncle: Tomorrow.
Me: But you're not cooking it? Who is?
Uncle: Nobody.
Me: So we're having sushi, then?
Uncle: Nope...it's not sushi
Me: It's raw fish!
Uncle: Nope, it won't be tomorrow.
Me: But you're not cooking it...yet it won't be raw tomorrow?
Uncle: Nope. The acid from the lemons and limes will cook it. It'll sit in the fridge til tomorrow evening.
Me: I gotta see this.

Fast forward to the next day, he took it out of the fridge. Sure enough, it was flaky white, like it had been cooked. Only he never even took it out of the fridge until then. Skeptically, I dipped a cracker into it and took a bite. Man, that was GOOD! I had to let others get some before I ate it all!
 
Man, that looks darn good. I love ceviche. Been eating it daily on our vacation down here in Belize. Down here the locals add a little bit of chopped habanero pepper. It adds a hint of citrus flavor along with some heat.

I'm going to make some with lobster if I can manage to catch a few.
