Does anybody know of a good gunsmith that does Colt (Uberti and Pietta) cap and ball work? I've been reading about some tweaks and want to upgrade mine.

Maybe you could contact one of the local S.A.S.S. cowboy action clubs. There's an active one over in Wartrace. Those folks are pretty serious competitors and I believe they have a cap and ball regiment in their matches. Contact info can be found on the website.
