Canning venison?

Way back when, probly 25+ yrs ago, I used to hunt and area on the NY & PA border.

One of the guys we hunted with used to bring canned venison with him that his mother would do. Apparently, they would can up a bunch after they had enough steaks and chops in the freezer.

I really liked it. I don't hunt with that bunch anymore.

Does anyone on here do any canning of venison or can lend so tips to how I might get started.

Yes i can mine.You add the chunks of meat and fill the cans about inch of water and one tea spoon of canning salt the meat makes its on juices cook 90 min.its awsome my grandmother passed this to me i do about 50 cans a year

Just so I have this correct, raw chunked meat in a canning jar

fill 1/2 full w/ water and 1tsp canning salt

Now cook 90 mins.????

This is the part I have the most questions about. How and what do I cook it in? Lids on, off, tight, loose? Then what?

I would appreciate the help if you don't mind.

I am really going to try and make some this yr. I don't see why I can't. I got one down and in the freezer already. And 4 DMP's to fill in two weeks during the opener of the southern tier here in NY (all flathead permits)

That was my first stop, seasonal supplies..............all gone.

I have checked with a few other local places, all out. I am heading to the local resturant and supplies store tonight. I will find some somewhere.
