General rule of thumb...................
place cubed meat loosely in qt. Mason jar, add 1 Tb spoon canning salt and fill jar to within 1" of top of jar with water.
The important parts are clean equipment and meat, NO HAIR!!!!!!!!!!!!!!!!!! & you need to place in a pressure cooker to get the correct temp.
Boiling water only reaches 210 degs. Canning meat requires at least 240 degs. That is where the pressure factor comes into play. Pressure makes more heat. I believe the ratio is 1 lb = 2 deg rise. So a 15lb weight on the pressure cooker will get you 30 degs more heat.
