I made some last year my parents have chickens so I put the eggs to good use. I made up my own recipe, but you should be able to google some others.
First boil cool and peel your eggs. In a quart jar add 1tbsp red pepper flakes - 1 tbsp kosher salt - 1 or 2 tabasco peppers or jalapenos 2 or 3 cloves garlic, cut the ends to release more flavor in the peppers and garlic.
Pack the jar full of eggs, then preferably outside in a pot bring some plain white vinegar to a boil. I usually add some more kosher salt in the vinegar around 3tbsp per half gallon.
Then with a laddle or glass measuring cup, scoop the boiling vinegar into the jars. Leave an inch from the top, but cover all the eggs. Put the lids on the jars put them on the counter and don't touch them they will seal within a couple hours.
The longer they sit the more flavor they will have, but let them
sit atleast 6 weeks.
