BSK vs. Venison bone marrow

I find deer fat, and especially the fat in the bone marrow, produces a taste I am not at all fond of.

Most people find the subcutaneous fat of deer to present a off flavor, however, anytime you are cooking a bone in roast, you are adding bone marrow flavor to the dish. It is a deep, rich texture that does not have any detectable "gamey" taste to it. I have yet to encounter a person (hunter or non hunter) who has said that any of the bone in dishes are "gamey" tasting.

I have tried bone marrow fat from deer. I thought it was absolutely awful.
 
You know that real good tasty part in the center of the circle bone in country ham? That's marrow right? My favorite part!
 
I'm with BSK on this one. I have eaten a lot of bone marrow. I do not like deer bone marrow. That is what the early mountain men called boudins. They loved it. However, they ate just about anything and loved it.
 
I'm with bsk. That center of the bone in country ham that looks like something pulled from a diaper with the texture and grit of sand still taste like poop.
 
Sorry Poser....I can eat just about anything in this world, but THAT is not one of them. When I do deer roasts, I get a beef roast with ALOT of fat on it and roast it all together....So you basically have the good beef fat taste in your deer roast :) . Anything with deer fat or bones....no thanks :D

Oh, I'm sorry. Let me go fetch my tweed jacket, handkerchief and silver spoon before I write my next post on TN Deer. I didn't know that our gentlemanly standards had gotten so high around here. Which way to the Kentucky Derby? :D
