I love black bear meat. Its so goods. I need to start making a trip to Maine every other year to kill a black bear just for the meat. My brother killed a couple of black bears in Ak and he gave me some of the meat. I did not have enough black bear to make a meatloaf so I took some venison and mixed with it.
1 lb ground black bear meat
1 lb ground venison
1/4 lb andoulli sausage, chopped up fine (I was going to use bacon to add fat but I forgot it so I used andoulli. I'm glad I did.)
1 onion chopped fine
4 gloves garlic chopped
3 eggs
1 cup bread crumbs
3 tblspoons fresh parsley
1 tblspoon cajun spice
2 tblspoons cheap parm cheese
Mix all ingredients together and form into a loaf. Bake on 350 for 1 hour.
I made a dijon and dill mustard sauce to pour over it which turned out pretty good.
Make a roux out of 3 tblspoons butter and 2 to 3 tblspoons flour. Cook until peanut butter colored. Add 2 clove garlic and cook a little longer. Add 1 can chicken broth and stir in. Add 2 tblespoons dijon mustard, more can be added after tasting if its not strong enough. Add 1 tblespoon dill paste from the tube. I don't know where you get it but its pretty good. It gives it kind of a pickle flavor. Cook a few more minutes and its ready to serve.
