Best way to cook squirrels

Well it must have been posted before but I can't remember seeing it so here is a new thread to go with this spring squirrel season. I already have the meat off the legs from two squirrels but it's all going into the freezer after a couple days marinating in the fridge.

How do you like to cook yours? I'm thinking deep fried, grilled with BBQ sauce, smoked, etc.
 
If tender then soaked in buttermilk and fried like chicken.

If not tender I simmer them until the meat falls off the bone and then it goes into a jambalaya. Or pot pie. Or make a gravy then top some rice with it.

I like squirrel but mainly just the ways I listed. It's the chicken of the trees though. You can do anything with it.

mine was a lot more tender than i expected! nothing near a rabbit. i baked mine with some seasoned salt, it woulda been better chicken-fried though

Crock pot with golden mushroom soup. I don't eat it but my boys would stand over the crock pot and wipe it out.
 
Completely Debone all the meat. (Sharp knife required). Flour and pepper and salt the meat and pan fry in olive oil. Then dip them in ranch dressing... yum! Beating them with a meat hammer helps on the tough ones.

Sounds pretty good. I don't have a meat hammer, but when I get tough meat I pound with the butt end of my knife handle as I cut and trim the leg meat. Males tend to be the tough ones in my experience. So far I have only been saving leg meat, marinating it for a few days, and putting in the freezer. I have a bunch saved up now so should cook it up sometime this summer.
