Can't think of the name of it but across the street from Los Arcos on the corner of Nolensville and Elysian Fields there is an old gas station, now panted yellow. The food is fantastic. Truly authentic, not Tex-Mex.
Yep, they have another one on Gallatin Rd in Madison that we visit quite often (Always referred to it as Lopez's). Best horchata and salsa roja that I have had. My wife and I ate at ElTapatio and it was really good, but a little pricey compared to some others. The Cubano Torta is huge, couldn't eat it in one sitting.
Also over off Harding and I24 is a little Carniceria place that does chickens an you get frijoles rancheros as a side instead of refried beans, its pretty dang good.
For something a little different, Mas Taco's Por Favor in East Nashville is pretty good as well. But they stay crazy busy.
On Friday afternoons you can go to most Super Mercado's in town and ladies will be selling tamales out of the back of their vehicles. A lot of places to get good authentic Mexican food in Nashville. Any of them you go by and they have a grill smoking in the parking lot, stop and get a roasted chicken with the sides (I think it is usually called Pollo Asado).
