Stopped by my little italian market on Saturday, because this is when he makes his mozz cheese. I've never had it that fresh before, but it was still warm when I got home. He said between now and Christmas he was going to try and make it during the week. If you've never had it before, you don't know what your missing.
 
that's it.

he only makes the mozz on saturday morning's. last time I was in there he had slabs of benton's bacon and also had some tasso ham in the cooler.

I love love love fresh mozzerella cheese. I've never had it so fresh that it's still warm, though.
 
When it's still warm, it still has a salty taste to it. Once it cools the salty taste will go away.
 
When I lived in Italy we'd go to the outdoor food markets - every town had one on a different day. The freshness of the food was unbelievable, and it was far cheaper than purchasing it at a store.

You could gain weight just taking the samples the vendors would give out. Mozzarella, Parmesan, you name it. Good stuff.
