During my Public Health days in the Air Force I remember interviewing patients who were infected with trichina. In every case it was traced back to the person eating under cooked black bear meat.

USDA has released new information that by using a sous vide, you can cook the bear meat at much lower temperatures, but it needs to stay at that temp for a specified period of time. This way you can eat it medium or lower.

I saw that article, interesting for sure. I'm not so certain I'm willing to Chance it myself yet.
