Big Beautiful Brisket, that is.

I like them rubbed heavy. Went on at 2:30 amidst a migraine starting up. Hopefully it will turn out well tomorrow around lunch break. Using mesquite for the first time

I rub a little more with each new effort. Thinking I may want to try a dry brine overnight on the next one.
Your rub looks nice and spicy, care to share?
Here's our homemade brisket rub. Photo straight from the recipe book (sorry for the stuff on the page 😃)

3/4 Tbsp or cup? Chili Powder - What kind? You have 1Tbsp of Cayenne so I figure the not hot type
The chili powder and brown sugar are 3/4 cup each. The chili powder is not hot, but the cayenne has some spice. It all tends to cook down pretty well (we use olive oil first, then add the rub), and even my spice-sensitive family members don't complain of the "bite"

my wife pulled it from the smoker over 24hr after I put it on since I had to run an errand. It went from 2:30 Sunday afternoon to almost 4:00 Monday afternoon. Let it rest double wrapped in a cooler for 2.5hr before cutting it. It was not the moistest brisket that I've done, but the flavor was excellent. We used mesquite pellets this time and they really gave it a great flavor.

Served with smoked mac n cheese, baked beans, and corn on cob the cob. Was a great meal

What kind of wrappings? I've seen them wrapped in all kinds of stuff, from saran wrap and newspaper to grocery bags. I've seen these envelopes of sorts and considered getting one, anyone use something like this?

Just an example as I've never used one.

This time we used peach paper as the inner wrapping and it did a good job of preserving the bark. Then a wrap of wide aluminum foil. Then wrapped it in towels and dropped it in a cooler for a few hours. That is when the magic happens
