Yeah there is. Grey meat that's not well smoked (if at all).
1) Gristly fat chunks in the meat means it wasn't cooked to a point long enough to render the fat out
2) Tough meat.....same as above
3) Poorly seasoned meat
4) Overcooked meat that's either charred and/or dry
Add liquid smoke to the list.
