For you guys that bake the bacon in the oven what temperature and how long do you bake it? And does the parchment paper make a big difference?

I do 400° for anywhere between 20-30 minutes depending on thickness and desired crispiness. I also line the pan with foil to help with cleanup.
THIS! Bacon grease seems to bleed through parchment and still makes a mess on the sheet pan. Wrapping with foil makes clean-up alot easier.

You can also use a bacon pan that has a rack in it. Try baking some peppered bacon from a butcher sometime. Changed my life lol.

I use 425° in a Convection-ROAST setting. About 15 mins in, I flip the bacon. I use a cookie rack in a bacon sheet, rather than just letting the bacon puddle in grease.

I also line my pan with paper towels and cover with enough water that it'll evaporate almost completely, leaving greasy paper towels in the bottom to throw away.

How long do you guys think bacon grease is good for? Do you keep yours in the fridge? I have started freezing the extra, but probably won't ever use it.. Mostly do it just to piss the wife off. :D
My grandmother had a bacon grease thing that sat on her stove. It had a strainer in the top. Don't recall ever seeing her throw it out.
