This whole thing is gonna be TL; DR, so.....
Here is the original recipe I ripped off back in the day: BBQ Addicts - Bacon Explosion
I usually do two logs at a time, one for pepperheads (which I'll post photos of) and one like the recipe. You can use any sausage from mild to hot, regular or Italian - whatever you dig. You can stuff and coat with whatever you like as well (although cheeses I think tend to leak out). My buddy did a breakfast version with mild pork sausage and coated in Maple Syrup instead of BBQ sauce. The BBQ Sauce thread made me remember these, and with kids coming over and digging them... I sense artery clogging activities soon!
There are about 3lbs of pork per log - you've been warned!
The weave:

The fillings for pepperheads (fried bacon, spicy BBQ, hot sauce and pepper(s) of your choice):
Wrapped:
Glazed with spicy BBQ:
Now that I think on it, I've only done these on grill or in oven.
Thinking smoker may work good here too.
