This, my friends, is what it's all about. Shot by 10:00, dressed by 11:00, and seared in the skillet by noon. Some of this backstrap was used convincing the guys at Chaney Lake Hunting Club that carpaccio is the way to go. Not overly well received, but it wasn't outright dismissed either. Who cares�.the TAFKAP family enjoyed it. But this hunk of backstrap was my lunch. Salt, pepper, and a hot skillet.

No, he didn't have any of this.....but later that night, he tried the carpaccio. Everyone calls it the "Deer Sushi" :D
