I've got 18 asparagus plants going. Unfortunately, they're on their second year. I'll wait until next spring to harvest.
 
i have 19 out of 20 plants growing. we eat asparagus about once a week. usually we eat them out in the garden and never make it to the house. they sure grow tall FAST
 
Let me ask you asparagus folks something. I have 18 plants in their second year and am waiting until next year to harvest. Some of my plants have 8 or 10 stalks, some have 1 or 2 stalks. Some of my plants actually have less stalks this year than they had in their first year.

Next year when I harvest them, will a plant with one stalk only have that one asparagus or will more sprout up after I have harvested that stalk?

 
Don't have any iddy about your question but there were two diffrent organic growers selling asparagus at the Richland Park farmers market this past Saturday and I bet one of them could help you out. I suppose they are there every week.

I bought two bunches and we ate one raw before we made it back to Nevada.

Store bought and home grown aspargus are two different animals.

The crowns should sprout more shoots each year as they get established. In my last bed I planted two year old crowns, didn't harvest any the first year, a light harvest the second, and it was unreal the number of shoots they sent up the third and following years. Keep them weeded good to prevent competition, don't let them get too much water (they don't like "wet feet") and watch for the asparagus beetles - they can strip a plant in just a couple of days and set them back significantly. With some care, you will be enjoying fresh asparagus for 20 or more years.
 
As you harvest spears, Gil, the plant will send up others. I'm not sure what the local rule of thumb is as to when to stop cutting spears each season. You'll want to research that. I just go with my gut, and that's not scientific at all.
