Armadillo Eggs for dinner

Jalapeño pepper (cored) stuffed with cream cheese, bacon bits and shredded cheese wrapped in breakfast sausage.

Ohhhh that is so good. I always see stuff like this on Monday morning, not Thursday night so I can plan for a nice weekend cook. I've been wanting to do some Scotch eggs, but that requires some planning ahead as well.

No Breading on the sausage but I guess you could.

Sometimes I'll put some bread crumbs in the cream cheese.

I love these but cut my jalepenos into half if they are regular sized and thirds if large. I like to make them into more manageable meatball sized
