does this hair falling out of the deer mean anything health wise. Or is just shedding their coat. Buck looks heathy so far. That's the only pic of the doe. She doesn't look so hot to me.

Completely normal this time of the year

They are just molting from their summer coat to their fall/winter coat. Totally normal, but they look pretty shaggy while it's happening.
