These are just fried.
Have 2 in the smoker that were brined in orange juice and injected with orange & pineapple juice.
Whew, the fried ones are cooked, cooled and cut up.
Now on to the sweet potato casserole
You must be feeding a big bunch. I have thought about trying a fryer but just never done it.

Estimated 40 tomorrow and more Saturday.
I have never fried a store bought bird. We raise our own heritage turkeys and brine them overnight then fry them. It's an entirely different taste and worth it to us. I still have about 40 birds that we will grind early next spring, nothing like store bought ground turkey which is all white meat. We use the thighs and back meat as well. Turkey burgers are pretty good and the wife does meatballs in the oven that are awesome with spaghetti. It also makes great soups and a good white chili
