Ah, Why Not?

Buffalo wings are good. Why not a Buffalo mini-chicken? I roasted up a Cornish hen then slathered it in Frank's Red Hot and butter. Then I whipped up an avocado cream sauce to balance some of the heat. The potatoes were fried in duck fat. There was a salad involved but salad pictures just don't do it for me.

Looks good to me, but out of curiosity, is the duck fat any good for frying? What's it taste like compared to other fats?

Wild duck fat I don't know. The domestic duck I rendered that fat from was excellent. Very nice, rich taste. I've never deep fried anything in it but for pan frying it's excellent. Also makes a good homemade salad dressing for a hot salad.
