how do you cook them? do you mostly fry them or do you boil them and cook them with dumplings or what?

freeze'em till winter and then boil'em, pull the meet off and make a stew. or braise the you know what out of them.

No need for stew. Fry an old tough squirrel until browned pretty, then throw them in a crock pot for a few hours. The meat will fall off the bone.
