It depends. If you want to pluck or skin it whole, cut a + sign or an x in the rear vent. reach in and pull all of the guts out. Takes like 5 minutes. East to gut compared to a deer.
If you just breast it then just cut out the breast meat, no need to gut.
not sure about mounting, never have done so for full body.

nothing in the field, do all the cutting when I get home. cut out the skin in the rear and pull all the guts out. Cut around the bunghole so you can remove the intestine with no spilling crap on the meat. Save the heart and liver for catfish bait!

Never gutted one even on draw hunt where it was dead for a few hours.
Pull skin off the breast and fillet the meat off the bone.
