A friend of mine told me about this process he uses for his ribs, I had them this past summer and they were out of this world.
Start out with your ribs, cover and rub on your favorite rub, don't be stingy, let sit for @ 20 mins, wrap tightly in plastic wrap and refrigerate over night. Set your oven at 225* and place ribs in a pan and bake @ 2 hrs or until the meat starts to pull back from the ends of the bones. Remove and let cool, cover ribs with favorite sauce, let sit @ 20mins. Rewrap with plastic and refrigerate overnight again.
Next day or two, fire up the grill and place ribs on rack, cook until warmed completely through adding more sauce as needed to gain a good crispy/gooey coating.
