Outstanding! Looks to be a perfect medium rare with a very thin gray band under that fantastic sear! How'd you like that black and tan seasoning?

We think it's really good! I bought a bottle around Christmas to try on the prime rib this year and liked it so much I've started using it on steaks and even burgers. This bottle is almost empty and will definitely buy another. Hardcore Carnivore does a black seasoning that's supposed to be really good but I haven't tried it yet.

I believe a lot of folks do a heavy sear and finish in the oven. Not sure how Mud Creek did his but his a absolutely perfect


I did a reverse sear. I smoked it on the weber until it reached 75 degrees internally, then added more coals and got my temp up to 500 for searing it.

VERY NICE!

Side note: a buddy of mine from high school started working for Fire & Smoke Society a couple years ago, and he's all the time posting up new offerings from their place. I've never found anything of theirs I didn't like. It's really good stuff. Glad to see them getting some traction. I know Walmart was a big retail get for them, and they were celebrating Kroger carrying a limited line too.
