In fact, if I ever get back to Italy, I'm likely to never return.

Towards the last third of the video, you'll notice that he's placed a healthy sprig of rosemary on the gutpile. Interestingly enough, my mom was mentioning just the other night that the SPaniards at a bullfight would all pass around sprigs (and pin them to their shirts) to mask the foul smell of bull blood, dirt, and gore from a bullfight. If I remember, I might start bringing fresh rosemary with me to the field.
