Canola oil cooking spray 1/2 cup whole wheat flour 1/2 cup all-purpose flour 2 tablespoons cornmeal 1 teaspoon salt 1/2 teaspoon fresh-ground black pepper 3 medium zucchini (cut into 1/2" x 3" sticks) 2 egg whites - beaten Preheat ove to 475 and coat baking sheet with cooking spray. Mix the flours cornmeal, salt, & pepper in zip-bag. Dip the zucchini is egg whites, then put them in the bag and go to shaking to coat. Put the zucchini sticks on the baking sheet so they are not touching. Now, spray the sticks with more cooking spray. Bake for around 6-7 minutes on the center oven rack. Turn the sticks and spray that side with the spray. Then cook for around 5 more minutes - until golden and tender. Not bad...not as good as fried...but what is?
