A local store has this on there deli darn good stuff,Afriend got me there recipe and I've been playing around with it,really like the last one I did... Heres both Enjoy

Stores recipe-
1 Can Black Bean Drained
1 Can Corn Drained( your choice)
1- similiar sized and chopped Onion,Green,Yellow and Red Bell Peppers
1- Jar Salsa (your choice)

Mine-
2 Cans of the Black Beans
1-Cup each of the Chopped Onion(Red) and Peppers
1 Can of Green Gaint White Shoepeg Corn
2 Jars of Tostios Med. Salsa
Cover and place in refridge for a few hours or overnight.

Real good on Tostios Scoops.

Sounds good. First time I saw it, the girl used black-eyed peas instead of the black beans and no salsa.

I don't usually post recipes on other people's threads but I will here just because I love Cowboy Caviar. I'll have to try your version but here's the one I make:

Cowboy Caviar

1 can Black-eyed peas, rinsed and drained
1 can Pinto beans, rinsed and drained
1 can White corn, drained
1 onion, chopped fine
1 red pepper, chopped fine
1 rib celery, chopped fine

Dressing
1/2 cup olive oil
1/2 cup vegetable oil
1/2 cup apple cider vinegar
1/2 cup sugar

Boil dressing ingredients, stir and let cool.

Add to vegetables and let sit in fridge. The longer it sits, the better it tastes � up to 2 days is great.

Drain before serving with tortilla chips or fritos.

I do like Black Eye Peas or better yet Crowder Field Peas,gonna have to try that recipe and do a little playing with mine next time.

Didn't know this is what it was called but made some with a can of black beans, a can of white whole kernel corn, and a medium sized Pace Pincanti sauce. Lip smacking good with Tostitos and SOOOOO easy to make.
