A real toast recipe:
1 cup cream cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh blackberries
4 eggs
1/2 cup milk
1 teaspoon almond extract
1 loaf soft French bread
2 tablespoons butter
1. Beat the cream cheese, powdered sugar and vanilla until it's aerated (fluffy). Fold in the berries. I said FOLD. You stir and the berries go boom.
2. Whisk the eggs with the milk and almond extract. Save it.
3. Cut the bread about 2 inches thick. Cut a pocket into the bread from the crust top. Do NOT cut all the way through. I said make a pocket. Use your finger and open the pocket up so it's big enough for you to insert a spoon.
4. Spoon about 2 to 3 tablespoons of the cheese/blackberry filling into the pocket and smooth it out so that it doesn't look like it's about to give birth.
5. Dip the stuffed bread into the egg mixture and let it sit for a few minutes.
6. Heat up a griddle over medium-low heat (It's ready when you touch it and you scream like a girl). Butter the surface and place a few soaked bread pieces on there. Cook slowly until golden brown. Flip and do it again.
And there you have it. Stuffed blackberry toast. Works with blueberries too.
