Questions on making jerky

I mix Kroger spicy bbq sauce, beer, and Texas Pete hot sauce for marinating. The I put it on the drying rack with a little salt and Tony's Cajun spice. Everyone loves it. That's a problem.
 
I made muscle jerky this year by slicing it with a meat slicer. Then I used a salt shaker to put the seasoning and cure on it. Then put it in fridge overnight. I cooked it on my pellet grill at 180 degrees. It turned out great. I only made 5 lbs because it was a test run. I wish I had made more because it's going fast.
