I think a lot of those places pick up the birds for you and breast them out immediately.

I have been pleasantly surprised with the skinless Pheasant I have cooked. I am sure they would be better skin on, but I've grilled & fried with great results...just don't overcook.

I baked one using chicken skin from a large breast and it was good too. I just seasoned it the same way I would a chicken.

I don't have any experience with chukar.
