Found a recipe online for making venison bacon. It requires about half venison and half pork butt (25 pound total). Mix up the spice/cure mix in water, mix with meat, form into loaves in aluminum pans, allow to sit for a day, then smoke. I'll make a batch in the next two weeks or so and post the results. Had a shop make something similar with moose meat when we lived in Alaska and it was excellent. Hope it turns out good.
