1 Tablespoon olive oil
2 Medium onions,chopped
1 Tablespoon of garlic (about 4 cloves)
3 Cans Great Northern Beans (I use Lucks because they help thicken)
2 pounds cooked chicken cubed ( I grill mine )
2 (4-ounce) cans chopped green chilies
2 Teaspoons ground cumin
1/2 Teaspoon ground cayenne pepper
2 cups chicken stock
In a heavy pan with a tightly fitting lid, heat the oil. Add onions and garlic and cook until soft. Add remaining ingredients and stir to blend. Bring to boil, Reduce heat and simmer about 20min to blend flavors.
Serve hot, with grated Monnterey Jack cheese and salsa. And hot flour Tortillas.
