I bet it was. I'd like to do birria one of these days, but haven't sat down to mess with it. Was the consommé done with your roast, or did you have to supplement with stock? How did you cook the meat?

We have a new world type of market here, it has a good selection of unique foods and plenty of banana leaf's were on the shelf. Im going to save a front shoulder from next year and try this!

Used the roast, guajillos, onions, garlic, cinnamon, cumin. I went the long route lol but got better results. That consomme had sooooo much flavor! Did add a little extra stock afterward to make sure I had plenty for the next day lol.


Appreciate it guys! Yall need to try it!
