Trout Dip

Started w/ 3 Govmt. trout from the Clinch
Brined overnight and smoked @ 215 till 170 degrees



2 cups smoked trout
4oz cream cheese
3tbs mayo
2tbs milk
2tbs capers
1 small onion minced
1tbs worcestershire sauce
juice of 1/2 lemon
hot sauce to taste
Mix all ingredients except trout. When mixed well, fold in trout.

Serve on bread, crackers or an old tennis shoe. It don't matter because its so damn good

 
looks good. I did a similar recipe (cream cheese based) this past winter on some stocker rainbows I caught. I don't like the taste of those hatchery fish except when smoked and put into a dip like that.

Some make it w/ the Greek yogurt instead of cream cheese and mayo.
