I can't remember what the brine consisted of entirely. I know it had apple juice, salt, brown sugar, peppercorns, orange peels, thyme, and cloves. The 6 chicken halves brined in that for about 8 hours and were then smoked for 4 hours with apple wood. I finished them off in the oven to crisp up the skin.

Best yard bird I've ever had.

How did they come out? Tasty?

I did a beercan chicken yesterday.
Marinated for 2 hours in fresh rosemary and thyme and 2 cans of 7-up.

Took the fresh herbs out and chopped them fine, mixed with garlic, olive oil and black pepper then drizzled over the chicken before putting on the smoker for 3hours.

I give it a B- Needed salt and more kick. Next time Ill add a little salt and some red or white pepper.

Spray pam cooking spray on the skin before you put the chicken in the smoker.
Its make the skin on chicken out of my SmokinTex come out like its off a grill.
