Looks good. Never thought of smoking crappie. They make some good fish tacos though

Speaking of fish on the grill... For those of you who may be on the fence about salmon, I highly suggest this recipe:

Take portion size skin-on salmon filets, and coat them liberally with something similar to this


You can use anything that has brown or demarara sugar in it for the crust.

coat the grates liberally with oil, and place face down on a hot charcoal grill. Let it cook until the crust is formed, and then turn the salmon over and shut the grill down. Let it smoke to finish your preferred doneness.

Heritage Farms bone in from Kroger's. Put them in a gallon bag with a little oil, add spices, refrigerate over night.
1/2 hot..packin' heat spices, crushed red peppers, garlic, black pepper and hot sauce
1/2 mild…garlic powder, chipotle rub
This packin' heat is spicy but has a really good taste.

Best fish I ever had eaten was from a guy that canned some smoked salmon that was fresh caught out west.
