Ribs and Pork Butt under a full moon

Up early this morning. Ribs should be ready for supper. I'll pull the pork butt tomorrow morning and eat it for several days. sammiches omelettes, wraps, tacos Oh my!

What's the rub?

This is Alton Browns Recipe. I've been using it for 20 years. It.s linearly scalable. For a 12lb butt and 4 racks of ribs I multiplied all ingredients by 4.

8 tablespoons light brown sugar, tightly packed
3 tablespoons kosher salt
1 tablespoon chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon jalapeno seasoning
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon rubbed thyme
1/2 teaspoon onion powder
