Got everything processed this morn... ended up with 25lbs of pure ground (neck, shoulders, hams), plus steaks from backstraps and tenderloin. Another 3.5lbs of scrap tendons, fascia, etc ground for the dogs.
We had fresh ground antelope burger (quarters aged 7d) for lunch, cooked med rare. No beef fat added, just pure antelope. Not sure I've ever had any meat better. Better than beef burgers for sure. Zero gamey taste, hint of sweetness to the meat.
