How much meat in weight should I be getting from a deer that dressed out at 140 lbs?

Yep I've always heard between 30 and 40%.

I got about 44 lbs of ground meat and I didn't weigh the tenderloins and back straps but I got all of it ground except the tenderloins and back straps.

44 is pretty good. Especially without the backstraps.

Depending on where you shot the deer. A hard shoulder hit can blow out on or both front shoulders and can cost you 5-7 lbs of meat. A whole neck roast - vs - one that has been deboned can be 1-2 lbs difference. How much time they spend pealing flank steaks off the ribs can be 2-3 lbs difference also.
