Well, the laid back plans of hanging out with the girlfriends family went in the bucket late last night...............So, we are spending evening in at my place and I am preparing.....

Bacon wrapped filets (4" cuts)
Baked spinach/cheese casserole
Rosemary/Garlic roasted red potatoes

Salad

&

Apple pie w/french vanilla ice cream

Just picked up the fixin's for my menu:

10 loaves of French bread
1 cafeteria-sized can of pizza sauce
5 lbs of shredded mozzarella cheese
250 slices of pepperoni
1 lb. of sliced mushrooms
8 oz of Canadian bacon
1 large sweet onion
1 can sliced black olives


Will be having the youth group make their own French bread pizzas. Keeps em busy for a half hour, then keeps em happy for a while after eating!

(personally I'd just as soon come over and eat YOUR menu)

I would be interested in hearing more about the brussel sprout dressing, I love them.

Not really a dressing.....we just quarter'em and place inside a 3 high stack of pineapple rings....add italian dressing on the sprouts....sprinkle whole thing w/ brown sugar, cover w/ foil and bake'em like ya would taters.

Well dinner was a success, the filets turned out perfect as usual.............. I rolled the edges in cracked pepper corns, then wrapped with bacon and seasoned with salt and garlic. Brushed them with melted butter, worstershire sauce and chives while roasting.

I took a few pics while cooking the other night, well when I started cooking. In the end I forgot to take finished photos but here are the filets just before I started cooking them.

The one on the left was a wooping 4" thick........hehehe (that was mine)

Man where they good.
