Doesn't taste bad, like someone else here said, it tastes like fish. Ridiculous amount of bones though. Ran it through the food processor and making patties with it to pan fry.

Never had it to be honest ts hard for me to stomach any kind of fish. Used to love catfish but now i will be lucky to keep a piece or two down

You havent been around the fishing business . I helped a friend commerical fish for years, stopped by a local fresh fish market the other day, not much difference in price per pound for cat or buffalo, maybe 25 cents a pound difference. As stated in an earlier post, buffalo has a good a taste as any fish you will eat around here. The difference is the bones. They have a different bone structure than cat fish, and have lots of small comb like bones. There is a way to properly dress Buffalo to remove alot of these. Also, bakeing is not the way to cook Buffalo. Batter it like catfish, fry it in a fryer, and there is none any better. Not being a know it all, but if you havent tried it, you will be suprised.

I would think Weldon would be a good name. Just be sure you don't overcook it. It it is perfectly cooked, you can call it Weldon.

BTW- The ribs out of bug buggalo are delicious. You cut them out just as you would a game animal and deep fry them. Pickled buffalo is also not bad. However, it does seem rough coming back up.

do you even know anything about buffalo or their diet? They are a lot cleaner than catfish.
