Our kids have gotten a lot more interested in cooking over the past year or two. We do Pizzas a lot, but I think Meatballs might be the perfect "Kids in the Kitchen" recipe. Its messy enough to make it fun, rolling meatballs is a lot like working with play-dough. Unlike pizzas you don't have to deal with a very hot oven. Meatballs don't require a lot of knife work or accurate measuring...and who doesn't love a big ole plate of spaghetti and meatballs?

We did this last year, and cooked some of the meatballs in the oven. Those got really crispy on the outsides. We kept the sauce separate from some of the batch (so that leftovers wouldn't get soft), and my wife made some killer meatball sub sandwiches in addition to the pastas and other dishes that we made.

Meatballs are a great thing to cook a huge batch of, because they work pretty well even after freezing.
