Fried catfish recipe please

I have a bunch of catfish fillets I'm going to fry soon was curious what's everyone's favorite recipe thanks

2:1 ratio of cornmeal to flour. Whatever seasonings you like. And shallow fry on medium high heat till golden crispy

Make sure your catfish is cold and dry before battering and frying it. I like to dry the fillets (or nuggets) put them in a sealed ziplock with the eggwash, and keep the bag in a big bowl of ice-water before dredging in a cornmeal mix. Fry in peanut oil.

The only way to screw it up is to deep fry to long.

I actually like catfish better baked. Blue gill, crappie and black oerch have spoiled me in the frying department

fillets go in eggwash, then cornmeal with Tony's mixed into the cornmeal. Peanut oil at 375deg.

i like mine crispy so i dont dip mine in anything wet. yellow corn meal and a bit of flour. sometimes ill put a tbl spoon of old bay and sometimes just salt and pepper.

I prefer less cornmeal. Just a preference.
